Long Story Short

My name is Florin and I have been baking my way around for the past 12 years (at Pophams, Flor, St. Bart's, Breadahead), obsessing over croissants and sourdough. My focus has increasingly been on using locally grown grains; translating their unique flavours into an array of baked goods.

Soon Felix and I will be opening Tarn Bakery, up on a hill in Highgate. Felix has worked in different restaurants in Australia and the UK (St. Barts, Merchants Tavern, Fridas), in pursuit of making people happy through food. We first met working together at St. Barts Restaurant and a while later, after Felix pestered Florin about opening a bakery, Tarn was born.

The mission is to bake delicious goods using UK grown wheat and ingredients from small producers. We aim to stand against the broken food system, which is littered with a lack of transparency, heavily processed products, underpaid producers, excessive food waste, and a disconnection between farmer and consumer. At Tarn we hope to build a community that connects our customers with our farmers, together celebrating beautiful produce and nutritious and nourishing food.

Our purpose at Tarn is to make you happy with sourdough, pastries (croissants, tarts, cookies, cakes- to name a few), and plenty of savoury options.

Baking the Dough

Through this project we are aiming to raise enough “dough” to get the last pieces of equipment necessary for our bakery.

You will be the reason why mixing, laminating and proofing pastries will be possible in our small bakery as your financial help will go towards a mixer, proofer and pastry sheeter.

Tarn Rewards 

Equally as rich as the first sight of a tarn after a gruelling hike up a mountain, is our glistening list of rewards. A few of our talented friends will be bringing you some very special workshops, from croissants to pasta to sourdough, perfect for honing your baking skills to impress your friends. As well as baked goods, we have t-shirts and tote bags on offer- or book us for your next party and have a menu designed and cooked for you and your friends.

Spring Fermentation Workshop

You will be harvesting veggies at the Brunswick Sky Farm (a rooftop garden in Dalston), preserving them and then taking them home to enjoy later. Snacks and refreshments on the house.
