Help Us Save Pasero
Writing this is extraordinarily difficult.
Pasero was created to be more than somewhere to eat and drink. We wanted to build a warm, independent neighbourhood space where our community could come together.
Over the past four years, that’s what Pasero has become.
We’ve welcomed first dates and family dinners, birthdays, engagement parties and weddings, business meetings, overdue catchups and quiet coffees.
We’ve supported independent chefs from all different backgrounds, bringing some amazing food to the area. Most importantly, we’ve built a wonderful team and become part of the fabric of our corner of Tottenham.
But today, Pasero is at risk of closing.
How did we get here?
Running an independent hospitality business has become relentlessly difficult.
Since we opened, the cost of almost everything has increased: ingredients, utilities, staffing, repairs and the everyday essentials required to keep the doors open. We’ve tried hard to absorb those increases and remain accessible to our neighbourhood, but our margins and financial reserves have gradually been eroded.
Like many genuinely local businesses, we don’t benefit from tourist traffic or the scale and purchasing power of a large chain. We depend overwhelmingly on our local community. That makes us especially vulnerable when people have less to spend, when the weather changes their habits or when holidays and local events draw people elsewhere.
Pasero hasn’t suddenly lost its purpose or its customers. Beneath the immediate cash-flow crisis is a business that has previously traded profitably, albeit modestly. But without sufficient working capital, even a viable small business can reach the point where it can’t continue.
We’ve now reached that point. But we don’t want Pasero to disappear without giving our community the opportunity to help save it.

Our plan
To make it through, Pasero needs a significant cash injection. So we’re launching a crowdfunder to try and make that happen. At the same time, we’re taking decisive action throughout the business to make sure that if we do manage to build a buffer again we’re more resilient to the ebbs and flows that have hit us so hard before.
We’re reviewing our pricing and costs, improving how we promote events and menus, expanding delivery and takeaway sales, strengthening service and actively working with suppliers and other partners to reduce the immediate pressure.
We’re asking for your support in two ways:
1. Help us secure 600 bookings in the next six weeks
If Pasero matters to you, please book brunch or dinner; organise a birthday or celebration; bring friends for drinks; book a private hire; or simply choose us the next time you meet someone for coffee. Every booking makes a difference and gives Pasero more chance of a future.
2. Help us raise £40,000
This is the bigger ask.
This is how we give Pasero the stability and breathing space needed to keep trading while our recovery plan takes effect.
The money will be used to:

£10,000 – Keep Pasero moving
This will help us meet our most immediate operating commitments and address the most urgent equipment repairs.
£20,000 – Protect our people
This will allow us to create a wage reserve, giving our team greater security while the recovery plan takes hold.
£30,000 – Restore stability
This will rebuild essential working capital, enabling us to manage quieter periods and purchase stock without continually falling behind.
£40,000 – Give Pasero a sustainable future
Reaching the full target will provide the financial reset needed to stabilise the business, complete our recovery programme and focus on building sales rather than simply surviving each week.

Why we believe Pasero can be saved
The situation is serious, but it’s not hopeless.
Pasero is an established business with a loyal customer base, an experienced team and a beautiful, well-equipped home. We know there’s demand for what we do: when Pasero is busy, the model works. What we currently lack is the financial resilience to withstand the quieter periods between those busy weeks.
We’re not asking the community to support us instead of taking action ourselves. We’re asking you to support a determined recovery plan that’s already underway.
Your contribution wouldn’t simply settle yesterday’s bills. It would protect jobs, preserve an independent local venue and give Pasero the opportunity to become stronger and more resilient.
