If we happen to get more money than our target will use that to carry out other planned improvements to the restaurant. On the wish list is a new fridge, fix our oven door, red wine fridge, more shelves, more ceramics, tile the kitchen, and maybe we might even do something about the lack of sign above the restaurant....
Wander is a small independent restaurant on Stoke Newington High St in London. Wander opened on Nov 8th 2017, and is owned by Alexis Noble, a young female chef from Sydney Australia. Prior to becoming Wander, the site was an abandoned old Thai restaurant. Alexis immediately saw the site's potential and fell in love with the area and sense of community in Stoke Newington. We did not have much money or time so we started small and since opening we have been slowly growing, evolving and figuring out how to run a restaurant in London.
Wander is now at the point that we are regularly full, so we we need to find a way to accomodate more guests. If you have dined with us when there is a large table in, you'd know it can get kinda noisy, so our plan is to build a private dining room downstairs. We will create a space that can accomodate up to 12 guests and allow the upstairs dining room to be solely for tables of 6 or less. Also included in our plan is a much needed revamp of our toilets. Because yes, every now and then the door on the right sticks and Alexis has to kick down the door ( although guests are rewarded with free wine.. ). And yes, the sink on the left is slowly falling off the wall...
Like everything at Wander, we plan to do as much of the renovations ourselves. If we raise our goal of £4000, we plan to start slowly working every Sun-Mon we are closed, then do the major work during our planned Christmas break, and hopefully be completed by mid January. Just in time for Australia Day! The initial renovations to Wander were an extremely steep learning curve. Over the course of those months, Alexis discovered how to expose bricks, paint, strip furniture, drill shelves and has slowly learnt about plumbing, electrics, fridge repairs, gas installation, hackney council enforcement notices and A3 licenses. Like every restaurant building project, we totally expect to come across the usual delays, setbacks and utter disasters. We are fully aware that deliveries will be late, tradies will not show up, and the very old building that is Wander will throw in some extra surprises. However Alexis has shown that she is more than capable of dealing with whatever setbacks come our way. Even if dealing with it sometimes just equals crying on the stairs for a few minutes...
