My journey so far...
I have been a chef since I was 15 years old and I love working in the hospitality industry! Over the years there have been great changes in food production and with the industrialisation of farming we have seen considerable damage to our environment on a global scale and the increased use of pesticides has had a detrimental effect on peoples health, allergies and food intolerances.
I believe all food businesses have a social and environmental responsibility to tackle societal issues and help build communities. Food businesses are perfectly placed to create awareness of the impact the food industry has on our environment and are able to educate customers, train individuals and make positive steps towards system change within their local and wider communities - so that is what we intend to do!
Pollito Loco are going to create a truly sustainable, zero waste food business that offers fresh, natural and affordable food for everybody.
How will we do this?
We did some research into food production and consumption and came up with the following conclusions...
- Chicken is the most widely eaten meat in the world
- Chicken is a healthier choice of protein
- Farming chickens is more land efficient than other livestock
- Chicken can be farmed all year round
- The market price of chicken is the most stable
So we designed a really exciting menu of funky flavours using the whole chicken!
Where are we...
We have already set up shop in Southsea, Hampshire and prepare our delicious chicken in our ghost kitchen for delivery & collection using Deliveroo, Uber eats & Just Eat.
Portsmouth & Southsea is a vibrant and creative community embracing small, independent and ethically responsible businesses providing the perfect platform for our enterprise.

Our crazy chicken...
We get our award winning, free range chicken directly from the farm, preparing it in house and utilising the whole bird to produce our menu, minimising waste. Our delicious chicken menu comprises of chicken lollipops, empanadas, burgers, Maryland, rotisserie, soups, salads & a range of sides. All of our chicken and vegan delights can be enjoyed with any of our crazy delicious sauces which are also made in house using fresh herbs and whole spices.

Our ultimate aim...
Pollito Loco want to go further and urban farm our chickens over an aquaponics system which will support the growth of all the herbs, tomatoes and chillies that we need to produce our menu. We aspire to do this by developing collaborative relationships with educational establishments, local authorities & community groups to create awareness and inspire individuals to take positive action for a greener, healthier future!
Our needs...
We worked hard in the summer of 2022 backstage and on tour feeding music industry professionals and bands to get enough money to build our first ghost kitchen which is based in Southsea, Hampshire.
However, having only just embarked on our "quest for a greener future" we need to increase awareness of our brand and build our customer base. We want to reach as many customers as possible to make our urban farming project viable.
Pollito Loco will grow its customer base and create awareness by trading at as many music festivals, sporting events and markets as possible, to do this we need your help in getting our first food truck on the road!
Our food truck...
We have been lucky enough to have been gifted a Renault Mascot Minibus which we have stripped, now we need to line her with stainless steel, install electrics and make her gas safe before we install our equipment.
