My Story
A little about me!
Hello, I’m Phil, and I’m opening Pip’s of Gill — a wine bar, café, and deli in the heart of Gillingham, Dorset.
I’ve loved the West Country, especially our little corner of Dorset, Sommerset and Wiltshire ever since I moved here 15 years ago. Our countryside is not just full of beautiful rolling hills - it’s alive with productive farms, skilled dairies, and dedicated local farmers and vintners who put their heart into everything they produce. I want to share that with residents and visitors to Gillingham, Shaftesbury, and the surrounding villages.
Creating a welcoming space
At Pip’s, my goal is to create a cosy, intimate space where people can relax, enjoy a glass of wine, and discover the very best local cheeses, charcuterie, and seasonal produce (alongside a carefully chosen selection from further afield). It will be a place where you can pop in for breakfast, linger over lunch, or enjoy dinner with friends most days of the week. We also want to offer a local lunch delivery service for the hardworking people who keep our community going. We plan to create lots of social events for all, Bingo, Vinyl nights, Wine and Cheese tastings. Something to bring the community together and meet new people with common interests.
But Pip’s is about more than food and drink. I want to help improve local prospects by building a team of happy, valued staff, training them in hospitality, oenology and fromology. Gillingham deserves a slice of the best, and if we all play our part, we can make this town a hidden gem.
After a long, long journey, we’ve bought the venue, so we already have a permanent home. Now, we need your help to bring it to life. The funds raised will go directly into renovating the space, furnishing it with warmth and charm, and equipping it to serve our customers to the highest standard.
