👋 Who we are
I’m Alex — a Sheffield native and ramen obsessive. For the last 8 years, I’ve lived and trained in Japan, working in traditional ramen shops, learning the language, and honing the craft from the ground up.
Alongside me is Jacob, my co-founder and close friend — a fellow food nerd with a sharp eye for detail and a passion for doing things right.
🍜 What we’re building
Together, we’re creating Noraya — Sheffield’s first ramen-dedicated restaurant, opening right in the city centre, and (from what we can tell!) the first in the UK to specialise in Yokohama-style Ie-Kei ramen.
It’s rich, soulful broth made from pork and chicken. It’s aged, hand-made noodles. It’s toppings prepped fresh every day. It’s authentic, bold, and built with craft — fast-casual ramen that hits like comfort food, with vegan and halal options for everyone.

We’ve spent months building the bones of Noraya — from the brand and the menu to the customer experience and kitchen systems.
We know exactly what we want it to feel like:
Steam. Fire. Umami. Soul.
A shop that smells amazing the second you walk in. A warm, modern space where you can slurp down something made with real care. A ramen shop Sheffield can be proud of.
