Our second target will help to fast track our sustainability programme and become one of the most sustainable restaurants in the country. We will also redesign our garden to create a modern, comfortable and atmospheric space to be used all year round. This will include bar, permanent live fire kitchen and an edible garden to grow our own produce.
THE SITUATION:
The Saltern is a dream project - an opportunity to breathe new life into a much loved Lymington institution - to share our passion, knowledge and the hard work of the best Brewers, farmers and artisans. With the shadows of 2020 looming we never thought it would be easy and have encountered plenty of surprises along the way BUT we are almost there.
With a lot of extra investment needed just to keep our guests safe during the covid -19 pandemic and extra work to keep the building happy - we are asking for support to help finish some essential parts of the pub and restaurant.
THE PLAN:
In return for some much appreciated investment, we will be offering a variety of vouchers, products and services that can be redeemed either online, or when we re-open - along with exclusive access to special events and experiences.
Our initial target of £10,000 will fund one of our biggest projects, the refurbishment of the draught beer cellar and to install a top of the line drinks dispense system to make sure that every keg & cask is Conditioned properly and every pint completely flawless.
Our second target of £20,000 will be used to landscape our beautiful garden. To create a modern, comfortable and atmospheric space to be used all year round. This will include bar, permanent live fire kitchen and an edible garden to grow produce for the kitchen.
Any extra funding will go towards future proofing the building and updating its current state to be accessible, safe and eco-friendly.
WHO WE ARE:
We are Joe and Henry - two close friends who met on the first day of priestlands school (5 minute walk from the restaurant). Our passion for everything hospitality became Læt, a 15 seat supper club we would host in Henrys flat on our days off - spinning off into Pop-up restaurants and street food stalls - The Saltern is now the space where all our ideas can gel. Taking inspiration from beloved restaurants ST. John, Black Axe Mangal and Noblerot to name a few - The Saltern boasts two completely different takes on dining - a contemporary British restaurant and a traditional pub connected with unified values to use the best local produce, incredible UK craft brewers and low intervention wine makers.
Joe has spent time behind the fires of Careys Manor, Balmer Lawn and Lainston House.
Henry spent over decade as a creative director and producer in the night life industry - cut his teeth on everything booze at Londons Clapton Craft and the Clove Club owned Two Lights.
