Myself and my wife have for the last 5 years successfully run an award winning cafe in Dorchester called Jesters Cafe in this time we have been awarded the TripAdvisor certificate of Excellence 4 years running and a Taste of the West Gold. Our lease has ended and we are looking to embark on our next project for an evening a la carte restaurant. I have been working on this idea for almost 2 years creating a range of menus covering the main evening menu, Valentines day, Mother and Fathers day and Christmas day.
I have been a chef since 1990, trained at Bath Catering College where I gained City and Guilds 706/1 & 2. I have worked in mainly 5 star Hotels and French restaurants in and around Bath, Torquay and Bristol. My background initially was as a pastry chef at Bath Spa Hotel and its sister hotel The Imperial in Torquay, from there I worked in several French restaurants in Bath the became head chef of the Oakhouse Hotel in Axbridge where I gained an AA rosette.
My wife has been a chef for 18 years and has a vegetarian/vegan background which has been a major influence for the cafe, which we would take into an evening restaurant with a separate vegetarian and vegan menu as this is the way forward for restaurants.
We want to raise as much as we can in order to provide Weymouth something it has never really had......a great restaurant with chefs that do know how to cook quality food, I have every confidence that we can deliver exceptional food without the price tag throughout the year be it for holiday makers and locals.
The site I have in mind is right on the Harbour area of Weymouth which is basically the food area of Weymouth. I have viewed this premises 3 times but each time the price set was always beyond our reach. The building has been completely updated by the owner and has everything in place ready for someone to go in, the restaurant itself hasn't traded for 2 years, because of this I have been informed that the landlord has reduced the rent to a mere £15k for at least the first 5 years compared to the £29k it last was when we enquired last year.

The menu itself is based around 5 starters, 5 mains and 5 desserts with an additional menu for vegetarian & vegan, every dish conceived is based around punchy flavours with a few ingredients allowing the main item to stand out. My aim is to achieve at least rosette standard which I know I can do from my previous experiences. Within the first year I would hope to achieve top 5 for TripAdvisor, a Gold award for Taste of the West and strive again for that first rosette.
With a pricing structure kept at £25 for 3 courses, we can offer food for the masses, not for the privileged few and without the nonsense of fine dining, along side the food we would provide local beers, ciders, English wines and a select amount of non English wines. I have an associate who works for a local brewing company just by Dorchester who would provide local beers and ciders, be it cask or bottle.
The restaurant itself will be called 'the Triangle Brasserie' with the logo for signage below.
