My name is Matthew Doak and my start-up company seeks investment in order to bring a new artisan spirit with a bold flavour profile to the market, which not only compliments a classic Gin and Tonic but also compliments a range of Cocktails.  


Originating from Derry and working within the bar industry across Belfast during my student years, I was lucky enough to work alongside some of the city's best mixologists. During my time behind the bar, I developed an idea a number of years ago about attempting to bring a spirit to the market, but never pursuing my goal or developing a plan until finishing my studies.

I have always had a keen interest in gin and whiskey, more recently so with the spirit revolution (especially gin), so 12 months ago I decided to look at exactly what the market was offering and how I could I build a brand that adds value to the market and the community, in the hope of producing something that is not just "another gin".


Starting from my roots in Derry, formerly built upon the linen industry and famously known for their shirt production (Tillie and Henderson), I began reading deeper into the history of linen production. I stumbled across the fact that the flaxseed was a fundamental component used in the production of linen. The flax plant at one stage dominated the agricultural industry, growing and cultivating the plant for their fibres in order to build the historic linen industry our city is found upon today.

After months of researching, visiting distilleries across Ireland and a lot of gin later, I am led to believe that the flax plant has never been used as a botanical in a gin which originally kick started my idea. From here, being a keen artist I sketched the 'Bishops Gate', an iconic piece of history within the City which the label has been built upon. 

After securing the legal trademark for the brand earlier this year and working alongside business advisers who have assisted me on constructing a business plan, the process has now led me to you!


My aim is to turn an idea into reality with your help! Your money pledged today will go towards the development of the product, recipe and website, giving us a product ready to take to the market.
