The Seafood Shack



Through our mobile van, The Seafood Shack, we aim to provide Ullapool, both visitors and locals, with locally sourced fresh seafood, simply, yet expertly cooked and served as a takeaway food in a central location during the summer season.  We believe that there is genuine gap in the takeaway market for such a business; however, as we have been developing our business plan, we realise the amount of time and money that goes into this project . 

We are both yound local girls, this is our first business and have found it very hard to get loans or any kind of finacial help. We have already bought our trailer and are currently kitting it out, of course as expected we are running out of funds and with this in mind, we are asking the public to help us towards creating our dream, any support will be greatly appreciated. 


The people in Ullapool, whether visiting or local, enjoy being outside, exploring the village, taking in the views, watching the ferry and the fishing boats and eating local produce.  As experienced commercial cooks we both very much enjoy providing delicious, simple food and our plan is to bring these two things together. This will fit in perfectly with Ullapool's seaside vibe.


A clean and well maintained catering trailer (which we have already sourced) will be specially adapted for the purpose, giving a traditional yet fun and trendy look, and we would anticipate being open from Easter through to mid/end September each year.  By sourcing and publicising our ingredients from local businesses, we would hope to promote the area to visitors while also helping sustain the village economy.  We aim to source our produce from local fishermen and businesses.


We attach a sample menu which we hope gives a flavour of what we can produce. As seafood lovers ourselves, we both feel the best way to eat fish is to keep it fresh and simple.  The food market today has become a lot healthier and we aim to cater for this, while offering more choice for those looking for a different takeway experience.  The traditional fish and chips are always very popular in Ullapool and we would offer an alternative to this but one which would complement rather than threaten the existing businesses. The Seafood Shack will have no chips!


Having now purchased a catering van and by producing this proposal, we moved on from simply having the idea to actually investing both time and effort in making it a reality.  We feel that we have the drive and determination to make a success of this business and, after many years of working for other people, have acquired the necessary skills and focus to strike out on our own.  We are both very positive about this plan and are committed to building a successful business which will enable us to stay in Ullapool and contribute something worthwhile to the village.



Kirsty has worked briefly in a commercial kitchen and for the last 4 years she has been a sole cook in various Highland shooting estates, providing a high standard for parties of 14+ guests and always using locally sourced meat and fish.  She has also cooked for a ski season at a luxury chalet in France.


Fenella has been head chef for 3 seasons at a top seafood restaurant in Kyle of Lochalsh, The Waterside Seafood Restaurant.  Her father is a local fisherman so she has been brought up around seafood.


We both understand the importance of budgeting and keeping on top of the financial aspects of the business while not sacrificing the quality of the ingredients we will use.  We are also fully qualified in food hygiene and health & safety training and these certificates will, of course, be kept up to date as the law requires.




Once we have successfully settled upon a suitable site for The Seafood Shack, our next steps will be to talk to Highland Council and other relevant authorities about ensuring we have the correct licences, etc. to enable us to operate from Easter 2016.  These will include


  • Highland Council food trading license
  • Food Safety Act 1990 certificate
  • Public Liability Insurance
  • Environmental Health Inspection
  • Up to date Health And Safety and Food Hygiene certificates


We will also start to look at marketing our business, advertising it widely through social media, (Facebook, Twitter, etc.) so that, when tourists are planning their next Ullapool visit, they will already be aware of the new takeaway option that will be available to them.  And, for the local residents, the Ullapool News, Ross-shire Journal and Northern Times initially with perhaps one or two trial ‘taster’ sessions in early Spring for us to fine-tune our menu.
