After 20 years of teaching i decided to leave and open a business. As a trained chef and with a degree in food science and nutrition the logical route was a food based business. Allergies were becoming more prevalent in the students i was teaching so I decided to open a Gluten Free Bakery with the idea to remove other allergens too. I traded for a couple of years at artisan markets and it became obvious that there was a definite demand for my products. A small bakery in Glossop came on the market and using my savings i opened The Pie Parlour & Bakery. We are a completely Gluten free bakery offering sweet and savoury baked goods. We also provide a great range of vegan items aswell. I have customers who have very specific dietary needs which we taylor foods specifically to their requirements. We also sell at vegan fairs up and down the country as well as local run events in and around Glossop. We supply a number of local businesses, as well as the people of Glossop.
Many of my customers suffer with coeliac disease which is a debilitating autoimmune disorder of the digestive system. It is not curable and symptoms can only be relieved through removing wheat and gluten from the diet. The smallest crumb can cause debilitating pain and discomfort to the sufferer. This is why it is important to continue to build our business. Mass produced gluten free products contain a lot of added ingredients to extend the shelf life. Fresh baked gluten free foods are a breath of fresh air to people with limited choices. We need larger premises to allow us to react to the growing demand for our goods and to build into vision we want to also start mail order delivery. In expanding i would be looking to initially employ a full time and part time person with the plan to have another 2 staff after the 1st 12 months. The money raised will be used to kit the new premises out with equipment that will be needed to increase production. It will also help towards signs, advertising, legal costs involved.
