The Simple Need for Daily Bread
Throughout the horrors and turmoil of the last few years, the Bakehouse in Kyiv has continued to bake day and night to feed the community.
We were so moved by Anna and her team’s brave and tireless work in the face of unspeakable devastation, we felt compelled to help in the only way we could.
We approached some of the world’s most acclaimed bakers and chefs - Yotam Ottolenghi, Richard Hart, Helen Goh, Tom Aikens and the Tartine bakery in San Francisco – and asked them to share one of their favourite recipes.
These precious gems we compiled and published in a cookbook entitled,
Knead Peace.
Today, the book continues to sell globally and proceeds of the profits support Ukraine through the DEC.
We were humbled to receive a Gourmand World Cookbook award, top Amazon Best Sellers and have garnered media coverage on the BBC, in the Guardian, the iPaper, Waitrose and Sainsbury’s food magazine and on national radio stations.
The Knead Peace Project
To extend our support, it feels natural to create a home for the Knead Peace Project.
We plan to open a community inspired bakery and café in Devon, England.
Using artisanal methods, local produce and craftspeople, our core mission is to nurture lasting positive change through baking.
We will offer baking lessons to people kneading peace , share our knowledge to burgeoning bakers and baristas to develop skills and ultimately help to address the shortage of qualified staff in the hospitality sector.
From scratch, we will bake slowly fermented sourdough loaves using wild yeasts unique to Devon for our daily menu and create beautifully laminated pastries and buns alongside our mouthwatering focaccia sandwiches.
Our Footprint in Devon
The Knead Peace bakery will support local farmers, millers, coffee roasters and producers in the Southwest to help promote a more sustainable food ecosystem within the region. We will use flours from millers and farmers who grow grains using regenerative farming methods.
We will commit to staying away from single use plastic and packaging and buy in bulk where possible. We want to be a proactive force in making Devon more eco-friendly.
To address the cost-of-living crisis and food waste, we will donate spare loaves to the local food banks in the community and our menu will include an affordable house loaf.

The money we raise from our Crowdfunder campaign will go towards breathing life into a community initiative that we are immensely passionate about.
There is vital equipment we need. A coffee machine and a proofer so we can offer fresh breads, coffees and pastries first thing. Large locally crafted bread shaping tables for our teaching classes. Stand-up fridge and freezers. The list goes on.
