My journey from Hornsea to this buzzing metropolis hasn’t been without its twists. I’ve faced language hurdles, fought through cancer, and navigated personal battles that tested me. But every stumble and win along the way only made me more connected to Japan and more determined to bring my vision to life: Hello Darling 東京.

Picture this: a dimly lit corner booth with a classic shaken-not-stirred martini in hand. The faint melody of "Yesterday" fills the air as a Beatles tribute plays on a retro vinyl jukebox. Across the bar, a stylish stranger orders a Vesper, adjusting their cufflinks with a knowing smirk—are they MI6, or just someone embracing the vibe?

Our menu is all about combining the best of British classics with Japanese flavours. Start with a Yuzu Prawn Cocktail, a fresh take on a British classic, and then dive into Tempura Fish & Chips—crispy fish with nori-seasoned fries and wasabi tartar sauce. For dessert? The indulgent Miso Caramel Sticky Toffee Pudding. And don’t forget to pair your meal with a refreshing Shiso Gin & Tonic! It’s a fusion of flavours that will surprise and delight.

At Hello Darling Tokyo, everything you see can be yours! Fancy the retro velvet armchair you’re sitting on? Or that funky 60s lamp lighting up your table? It’s all for sale. The Challenge: Overcoming Setbacks
Three years ago I was diagnosed with caecum cancer. After intensive chemotherapy, I am in remission, but then earlier this year, I faced a major setback when substantial savings I had built to fund Hello Darling were taken without my knowledge by my ex-wife. It was a devastating blow, but it has only made me more determined to see this dream through. I’m now turning to my community—both locally and globally—to help make Hello Darling a reality.
How You Can Help:
To bring Hello Darling Tokyo to life, I’m setting a goal of £27,500 (around 5 million yen) through crowdfunding. These funds will help cover the essentials, but this is just part of the overall funding we need. We are also looking for investors, with a minimum investment of 1 million yen, to take Hello Darling to the next level.
What Your Support Will Help Fund:
1. Securing the Location (£10,000)
We need to lock down a central Tokyo spot that will attract both locals and tourists. This amount will cover the deposit and initial rent for a vibrant, accessible location.
2. Designing & Decorating the Space (£7,000)
From vintage furniture to authentic 1960s memorabilia, this budget will allow us to create an immersive space that’s a true blend of British and Japanese styles. We’re collaborating with a retro furniture supplier to minimize upfront costs.
3. Sourcing Ingredients for Our Fusion Menu (£3,000)
To serve our signature British-Japanese fusion dishes, we need fresh, quality ingredients. We’re sourcing many of these ingredients from Gunma, supporting local artisan businesses.
4. Purchasing Essential Kitchen Equipment (£5,000)
To bring our delicious menu to life, we need basic kitchen equipment—ovens, fryers, refrigeration, and more.
5. Launching a Marketing Campaign (£2,500)
We need to spread the word! A portion of the funds will go toward digital marketing, social media, and promotional materials to make sure Hello Darling gets the buzz it deserves.
