I am crowdfunding to open the first Ananda Bistro & Café in the Scottish Borders - promoting health and well-being.

For those who don't know me, I am Rajesh Ganatra. Of Indian origin, my varied life has seen me move from Uganda to the UK, then Poland for 25 years, and now I have settled in the Scottish Borders where I’ve been based for nearly two years.
Every country I’ve lived in and visited, I’ve explored through food and cuisine, using what I learn to create delicious fusions of culturally diverse dishes.
Initially, my move to Scotland saw me secure a job in the hospitality industry; however, with the impact of Covid-19, I sadly lost that post. And so now, I am looking to start up my own business doing what I love most.
I have to admit, starting a career in the food industry was not a conscious decision on my part - it was simply a happy accident! After facing several personal crises in 2008, I lost everything and with nowhere to turn, it was the Art of Living Foundation (www.artofliving.org) who took me in as a volunteer at their Yoga, Health and Wellness centre in Warsaw, Poland.
In the beginning, my duties included cleaning, washing floors, gardening, and assisting in kitchen duties - and that’s where my passion was sparked! I already followed a meat-free diet (because that’s what we ate at home!) but over my many wonderful years working at the Art of Living Foundation, I had the opportunity to develop my knowledge of preparing a wide variety of vegetarian and vegan food, and learn from those around me to perfect my cooking skills.
I’ve been cooking for more than 10 years now and wherever I go, I see that food is one of the most common ways in which people come together. And tasty, wholesome food that does just that, will be my focus at Ananda.
With set menu, everyday there will be something new and different on offer, reflecting the ingredients I have been able to source locally. The vegetables will be seasonal and used to create dishes that are full of flavour, colour and texture - all made with love!
I'll be offering freshly made sandwiches and wraps, tasty soups and colourful salads; as well as ready to eat meals for those looking for an easy but healthy option to take away and eat at home.
In my heart I feel that eating a right diet is the right thing to do and Ananda has been my vision for a long time. It is the latest project in my culinary journey and something I've been dreaming of for years.
