I've been involved in the catering industry all my life and the present situation highlighted to me more than ever the need to supply local and pollution free food. I'd like to try to make at least 75% of my products locally grown .
Id also like to set up a medical mushroom grow. Reishi, maitaki and other mushrooms that are great for immune system . Basically , most of the indigo herb mushroom selection. It woukd bring the growing from China to the UK.
