Hazelnut Pâtisserie will open its doors in the first quarter of 2021 in Braemar, the heart of the Scottish Highlands. It will be based on French savoir-faire and recipes.
It is a project of a lifetime for one, an evolution for the other. It is the beauty of a friendship whose love for food and Scotland is brought together to form a truly unique experience.
Combining
Scottish flavours with
French culinary flair,
Hazelnut Pâtisserie will offer a mouth-watering selection of beautiful pâtisseries. From the traditional
chocolate eclair,
lemon meringue tart or chocolate royal to
quiches,
savoury tarts, and other
light lunches–
all handmade in our kitchen. We will offer excellent tea and
coffee,
wines and
real ales, also made on the premises by the
Braemar Brewing Company. We will also provide a small selection of
locally produced foodie items and gifts and use
local farms and suppliers where possible to provide delicious treats.
We will be a vibrant part of our community, a culinary destination for food lovers and the go-to place for wine, picnics and of course pâtisseries.
Most of all, we will bring joy to all those who visit Hazelnut Pâtisserie.

While we have planned, budgeted and saved, starting a new business always requires a bit of extra investment...
We have decided to appeal to the generosity of our followers to help boost our funds so we can start to work our magic.
Family, friends, members of our wonderful community, acquaintances or well-wishers, we hope you will answer our call and join the project!
The funds we raise will help to buy two essential pieces of equipment:
A stunning ISA Italy refrigerated cake display to show off our elegant pâtisseries and savouries.
This piece of equipment is a hugely practical investment that will last us for years and set the tone for the whole pâtisserie. It will help to create the atmosphere which reflects the identity of Hazelnut while providing the best refrigeration with the air circulation distributed evenly to prevent moisture and misting.
A small breakdown for those of you who like (rounded up) numbers:

If we exceed our goal, we will use the extra to perfect the ambiance of our shop, repaint the facade, get outdoor furniture and top up the equipment we need to make our production easier and faster.
We are already well under way!
- The company is all set up - Rosilde Limited is our name (you see what we did there...?) - and all the paperwork going with it is done.
- We are using the premises that houses Ros' coffee shop. We have planned and sourced equipment and suppliers for the refitting of the kitchen and reconfiguration of the main space, commencing in January.
- Menu planning and the choosing of our ingredient suppliers are almost complete. Costing will be done through December.
- Partnerships with local businesses are under discussion to offer exciting experiences.
- Facebook and Instagram are in working order to let our followers know the stages we achieve. Website will be coming soon -> follow us on Instagram !!
- We are also at the final stages of our branding project which was super exciting! -> check out fortytwo studio!
- Spreadsheets and lists are in full swing, a good thing we love them!
- Sold out of our Christmas entremets offer in two days!
We are looking at opening, all being well in February with the aim to spread a little love at Valentine's. This will also give us time to gradually grow before the onslaught of the summer months where pâtisseries and picnics will be flying out the door!
This is a partnership between two friends who met a few years ago while working at The Fife Arms in Braemar. We share the love of the great outdoors, food and wine so a plan was hatched to bring something new and exciting to the village.
Ros Evans moved to Braemar 18 years ago with her now husband, Dave. In between raising two children, Ros and Dave opened Taste, a popular café and deli which will soon house Hazelnut. Ros was part of the opening team of the award-winning Fife Arms Hotel in Braemar, as the hotel’s ghillie she was responsible for planning trips and activities in the Cairngorms for visitors around the world.
Mathilde Lacouriere is a young classically-trained French pastry chef. She moved to Scotland over 5 years ago and fell in love with the landscape and lifestyle of the Highlands. She has already worked for some of the area’s most renowned establishments including the Rothesay Rooms in Ballater and The Fife Arms in Braemar.
Hazelnut Pâtisserie will combine Mathilde’s exceptional culinary talents and Ros’ hospitality experience to create a small but perfectly formed patisserie in the heart of Braemar.

Braemar is nestled in the heart of the
Cairngorms National Park, one of the most beautiful parts of
Scotland. It is surrounded by heather covered hills, majestic wildlife, heritage and cultural sites. Close to
Balmoral Castle, Birkhall Estate and
Royal Lochnagar Distillery, home to the
Braemar Highland Gathering, the world's most famous Highland Games. It is adored by many and loved dearly by those who have built the most
amazing community over the years.
The multi-million-pound refurbishment of
The Fife Arms Hotel, a 19th century former coaching Inn has rejuvenated the village with a buzz of national and international visitors year-round.
Braemar will soon welcome other
independent businesses. A
chocolatier, a
micro-brewery, a
handcrafted wood & furniture shop as well as the refurbishment of The Invercauld Arms Hotel. Our village is flourishing and we are so proud to be a part of it with
Hazelnut Pâtisserie.

We find that we are low risk:
Braemar has a diverse clientele. Locals, day trippers from around Scotland and holiday makers making the Cairngorms National Park their base year-round. Glenshee ski area is also a short drive away.
Being an independent business comes with its challenges. We have both worked within the hospitality industry for many years and are aware of the long and sometimes unsociable hours to make it a success. We are also very aware of the drive and dedication it takes to run our own business. We are realistic with our approach and firmly believe that there is a market for Hazelnut from locals and tourists alike.
Even with the global pandemic of COVID we feel that there is always a place for cake and a smile!
