My name's Kayleigh, my idea started when I was at University and I was making cakes, ordinary ones, but people couldn't eat them due to allergies. So I started to experiment with alternatives and realised that no-one was doing cakes suitable for every allergy so there was always someone missing out.
My recipes are simple, no ingredients that are chemicals, I use gluten-free flour, oat milk and vegan sunflower spread and either flaxseed or Orgran egg replacer for the basis of my cakes. Just because someone can't have an ingredient doesn't mean it should be substituted for something out of the ordinary. I have an allergy book containing every ingredient that goes into all of my cakes when I sell them on stalls and I always check whether there's any very unusual allergies because I want to make sure people are safe to eat them.
My vision is to start a cafe where people can come and always eat everything on the menu, with second hands books available because I love reading and I know that book cafes work!
I will use the money to establish myself and train people with my recipes and make a safe space for coeliacs, vegans and anyone who just can't buy cake for a reasonable price!
