Who are we?

We are Andy and Lyndsey Appleton, and little sausage dog Gnocchi (of course!) of Appleton's Restaurant. Andy is a self taught chef, working all over the world with his last employed role, before we started the restaurant, being Head Chef at Jamie Oliver's Fifteen Cornwall. I've had a chequered varied career path but I met Andy at Fifteen where I looked after the Apprentice training programme and the charity that owned the restaurant.
This is Appleton's PRESENT, Whats Appleton's PAST? Whats the FUTURE?
We started the restaurant in 2016, in a vineyard on the way to Padstow. We have learnt so much; we have been reassured, humbled and surprised by the regular custom, our consistently great feedback and the growth and expansion we have managed quite organically in the past 3 1/2 years. However, we decided we need to be in a busier location, one with passing trade and footfall, and so have decided to move to a new venue in Fowey which has such incredible potential and we are so excited about the future for us there.

We took a massive leap of faith when we opened originally, both of us having a lot of experience in hospitality but this being the first time we had run our own business... and what an eye opening, soul searching, challenging experience it has been!
We started as just the two of us, Andy cooking and me doing everything else, within a year we had taken on a couple of members of staff and that staff number growing again this last year. We've always been quite a small team and each member of our team is and has been incredible, but we have at times been stretched and there's never been any room for any staff sickness or incapacity - I broke my wrist within months of our first opening and quickly learnt no-one else was going to carry the plates to the tables so had to learn how to carry with one arm!
We've had to restrict our offer at times in terms of our opening hours or our capacity to take any more reservations on busy days, simply a decision to maintain an exceptional standard of food and service and all round experience that people, we hope, have become used to and expect from us.

We don't want to restrict ourselves and our team, or our future as Appleton's. We want to grow to the next step again so we can take on more staff again; we can do more; we can open more; we can make the menu bigger and continue to expand on what we have already established.
Hence this new further leap we are embarking on!
The new venue has the potential to be a real busy little hub of a restaurant (and bar) for locals, aswell as visitors to Fowey, and even further afield Cornwall in general. It's a amazing building which has been in the very centre of Fowey for centuries and has seen many uses over its lifetime. In the past year, it has been sympathetically and very beautifully restored to its most incredible state yet, and whilst its history is long, impressive and interesting, we want to be the new history of the walls.
It is an empty shell at the moment and we will be responsible for fitting it out, which is a costly exercise to say the least. We have a lot of stuff we can bring with us, but whichever way we look at our list of what we need and however many times we write it all down, we are still falling quite short on what we require to make it as incredible as it can be. We are asking for your help, wherever and whatever you can, to help us raise some more funds towards making it not only possible but truly incredible.
