Rib Street

Rib Street started trading in May 2013 in order to produce the 'ten minute rib'. Having watched programmes set in the USA, such as Man vs. Food, I wanted to find a way to bring great barbecue to the UK. The problem is that our weather hardly lends itself  to hours in the garden tending the barbecue pit,  you are likely to just end up with a puddle of rainwater with meat floating in it!

Well I can't do anything about the weather, but I can do something about reducing the cooking time needed outdoors. My idea was to take the modern technique of sous vide cooking and apply it to the traditional favourite of barbecuing. We take pork and beef ribs, season them with our own spice mixes, then vacuum pack them before they go into the warm water bath. The pork ribs are cooked for 10 hours and the beef ribs for 20. This long, slow cooking ensures the ribs are succulent and tender and packed with flavour.

Not just for barbecues.

One of the surprises has been the different ways our ribs have been taken up. They are not just a barbecue food, but a delicious and quick family tea. The pork ribs can be cooked from frozen in around 12 minutes, or 5-7 minutes fresh. The beef rib can be heated whole in 15 minutes, or sliced into a frying pan and cooked in minutes to add to pasta, noodle salads, eaten with mash peas and gravy or any other way you might fancy. It also makes the best Bolognese  imaginable. 

So what do we need the funding for?

We sell our ribs direct to the public at farmers markets and community markets. At present we only have one stall set-up  and this is holding us back. We would like to employ someone to take our ribs out to other markets in the region. We need to raise the money to buy a gazebo, tables, POS signs, storage, cold-boxes, a griddle and all the other bits and pieces needed to work at a market. This would help us reach a wider clientele as well as creating a job for someone. If we managed to raise more than our target amount we would simply add another stall and it's accompanying job.

All our meat sold at the markets is British and Farm Assured. We always source as locally as possible.
