I am trying to raise funds to get the business started. I have reduced the start up costs to about as low as i can get them. This is the first step to show that it can garner serious interest. I will seek out further funding after this from angel investment.
These sandwiches are absolutley delicious and are one of the things I miss most about the wonderful city of New Orleans. Po-boy a.k.a. poor boy sandwiches have a history with the city back to the US great depression and the strikers. While I cannot offer free sandwiches to striking streetcar operators as the Martin Brothers did, I can offer good value for a quality product.
I will be baking my own po-boy bread, which is similar to french bread, from a Leidenheimer recipe. I will source as much product locally as possible to help contribute to the local economy. Slow-cooked roast beef, shrimp, fried chicken, hamburger are some of the delicious fillings. This is a unique opportunity to get in on the ground floor of a sucessful business model in New Orleans, here in Scotland.
I believe I am well qualified to do this. I have many years working in restaurants. I also have training in business including accounting. My knowledge of both New Orleans and Edinburgh provides me insight into sucessfully marketing the po-boys.
